Veggie Cooking: Bunny Bites

Sometimes a girl needs to let loose in one of those ways, you know the ones, when you have one of your girlfriends over and you do nothing but be silly and giggle all over the place.  Well I totally had one of those and we ended up with some great and, if I do say so myself, cute food.  I have been going through my craft magazines to clean them out for my new craft room and the first ones on the chopping block are the Halloween ones.  Why oh why would you take the Halloween magazines out to the wood shed? Because I have tons, and let me tell you, after you buy the Betty Crocker Little Halloween book every year you end up with the same recipes, so it's time to share with others.  I pass them on so they can find a new home, don't you fret.  So I have this recipe for Boo Bites and Sarah decides that since we are approaching Easter these need to be Bunny Bites. Thus the giggling and shaping and smooshing begins.  We dug out the candy pieces for faces and made my husband try to guess what these cuties were.  His guess: owls.  Oh well, they are still adorable.

Bunny Bites:
1/4 cup butter
30 large marshmallows OR 3 cups mini marshmallows
1/4 cup light corn syrup
1/2 cup peanut buttera
1/3 cup Semi-sweet chocolate chips
4&1/2 cups Crisp rice cereal

Line two cookie sheets with wax paper.  Melt butter in a large saucepan over medium heat, add in marshmallows.  Stir constantly until melted fully.  Remove from heat and add in corn syrup, stir until well blended.  Add in the peanut butter and chocolate chips and stir until chips are melted completely.  Pour in cereal and mix until coated.  With wet hands, or ones coated lightly in oil, shape into bunnies.  For Boo Bites roll into 1&1/2 inch balls.  Cool on lined cookie sheets and store in an airtight container.

Cute and tasty. Great for kids lunches, husbands too.  Mine wouldn't know, he ate them all before we could get them into a lunch.  Why not let kids make them to share with friends in whatever shape makes them smile!
