Blueberry Streusel


This is my mom's recipe and I've been eating it for breakfast for as long as I can remember.  We have family that have blueberry farms in michigan and go every year to bring home pounds and pounds to freeze.  Frozen berries are great for this recipe and that way you can make it all year round.

Ingredients:
3/4 c sugar
1/4 c soft shortening
1 egg
1/2 c milk
2 c flour
2 tsp baking powder
1/2 tsp salt
2 c drained blueberries

Topping:
1/2 c sugar
1/3 c flour
1/2 tsp cinnamon
1/4 c softened butter

Preheat oven to 375.  Mix sugar, shortening, and egg thoroughly.  Stir in milk.  Stir in dry ingredients.  Stir in blueberries and spread in greased and floured 9 inch pan.  In separate bowl mix together topping ingredients until coarse crumbles form.  Sprinkle topping mixture on and bake 45-50 minutes.

Thats it.  Super quick and easy.  You'll find that it gets eaten just as fast though.  This is what the pan looked like 5 hours after coming out of my oven.
